Southwest Turkey Taco Stuffed Peppers
These stuffed peppers are basically taco night… but with a glow up. Tender roasted bell peppers filled with a cheesy, seasoned turkey taco mixture that’s cozy, filling, and actually makes you feel like you have your life together (even if your laundry says otherwise). Bonus: leftovers are chef’s kiss for lunch.


Cajun Chicken, Sausage & Rice

This hearty casserole is inspired by a classic jambalaya but without the fuss. chicken, turkey smoked sausage, rice, peppers, and seasonings all cozy together. It's been a reader favorite for years and years!


Instant Pot Buffalo Chicken Tacos
Imagine if buffalo wings and tacos had a baby, and it was practical enough for a Tuesday night. shredded buffalo chicken straight from the Instant Pot, piled into tortillas with all a creamy crunchy slaw situation you'll love so much! It’s spicy, so flavorful, and feels like a treat even when you’re running on empty!


Air Fryer Salmon Bites

Yes, salmon can be easy. These crispy bites come out perfectly in the air fryer in minutes. The whole family devours this recipe no questions asked! You might even want to double it. I love these because they can be served multiple ways in a salad, in a taco/wrap situation, or on a plate/bowl with whatever carb and veg you're craving.

Totchos

New on the blog this week!!! If nachos and tots had a baby… it would be totchos!! Crispy tots piled high with taco goodness and melty cheese = the kind of dinner that makes everyone happy and requires basically zero energy. Is it the healthiest dinner on the planet? Not quite. But it’s a seriously delicious choice that’s still way better than most drive-thru options. I love serving mine with a nice big salad to round things out, and boom… dinner feels fun and responsible.


WEEKLY GROCERY LIST

Many requests to include a grocery list with meal plans and I'm working on a way to include these in the best way. This week we're trying it this way- right inside the email. However, I do think i'd like to have a PDF eventually so it's easy to print. I hope this is helpful for those who asked for it for now!

Produce

  • Onion (2)
  • Bell peppers (5)
  • Garlic (5 cloves)
  • 16 oz bag fresh coleslaw mix
  • cilantro

Protein

  • Ground beef or turkey (2lbs)
  • Boneless skinless chicken breasts (2lb)
  • boneless skinless chicken thighs (1 lb)
  • Turkey smoked sausage (14 oz)
  • fresh or frozen Salmon fillets (1 lb)

Dairy

  • 2% Reduced Fat Shredded Mexican Cheese (or whatever shredded cheese you love)
  • white cheese dip (Gordo's/ponchos)

Frozen

  • 28 oz bag tater tots
  • corn

Pantry

  • Long grain white rice
  • tomato sauce (8 oz can)
  • Olive or avocado oil
  • Salt & pepper
  • cooking spray (preferably avocado oil)
  • Frank's Buffalo Wing sauce
  • apple cider vinegar
  • tortillas
  • diced fire roasted tomatoes (14.5 oz can)
  • cream of chicken soup (1 can)
  • dijon mustard
  • tortillas
  • light mayo
  • dijon mustard
  • black beans

Extras (not necessary, but do add deliciousness)

  • Sour cream or greek yogurt
  • Salsa
  • Avocado
  • Pico de Gallo
  • Lime
  • Tortilla chips
  • Light Mayo
  • lettuce

Spices

  • garlic powder
  • chili powder
  • cumin
  • smoked paprika
  • chicken better than bouillon base
  • kosher salt and pepper
  • buttermilk Ranch Seasoning packet (hidden valley)
  • dried dill
  • celery salt
  • cajun seasoning (i use slap ya mama)
  • kinder's lemon pepper seasoning
  • taco seasoning packet


🌟 MAKE LIFE EASIER SUNDAY PREP

If you have 20 minutes:

  • chop peppers & onions and store separately
  • dice chicken breast for the cajun casserole and store
  • dice turkey smoked sausage for the cajun casserole and store
  • you can prep the slaw for the buffalo chicken tacos one night in advance

Even a tiny bit of ingredient prep makes a huge difference on busy nights.
