It's hotter than hades, here's 5 summer dinners that hit the spot.


I know I can't be the only one who gets into the thick of summer and suddenly has absolutely no idea what to make for dinner anymore, like I barely want to even step foot in the kitchen.

It's waaaay too hot to turn on the oven, nobody wants a heavy meal especially after a day outside, but for some reason, everyone still needs to eat more than random handfuls of pretzels with peanut butter out of the pantry (although some days im perfectly fine with that).

So here are a few easy meals I actually want to eat right now.

1. Greek Chicken Bowls

House favorite, reader favorite.

It's fresh, filling, and hits the spot every. single. time.

2. Air Fryer Chicken Tenderloins

If you follow me on social media, you know that I literally live off of these. Usually I just make a batch and throw some sauces on the table with some fries and a veg. Dinner served and my kids go crazy over them.

3. Southwest Chicken Salad

Fresh, creamy, protein packed, and full of all the good things. Really perfect for an easy summer lunch and doubles as a light dinner!

4. Slow Cooker Kalua Pork

We don't eat a ton of pork in this house, but this recipe? We smash it every single time. I LOVE this recipe. Perfect for bbq sandwiches, loaded bakes potatoes, tacos, rice bowls, salads, burritos. It's so perfectly versatile and it's a crime that I don't share it with yall more!

5. Bruschetta Chicken Spaghetti

This is a sleeper hit during the summer. It's lighter than traditional spaghetti and just bursting with lots of flavor. Both my kids LOVE this too.
