Hey there! Happy Sunday.

Some nights the cooking energy is just... gone, amiright? You still want something tasty that feels healthy..ish and homemade, but not a recipe with a 23 steps and every pot you own in the sink. I gotchur back!

Lets go ahead and ditch the whole "what’s for dinner?" stress this week. I pulled together 5 super simple, family friendly favorite dinners that come together fast with no crazy prep and no weird ingredients. Just meals your people will actually eat and love.

1. Instant Pot White Chicken Chili

Cozy, creamy, and full of flavor. Just toss everything in the Instant Pot, press start, and enjoy a hearty bowl of tender chicken and warm spices with almost no effort. Top with crunched up tortilla chips and diced avocado for extra yum!

2. Chicken Pot Pie Soup

Comfort in a bowl with tender chicken and veggies made in minutes! All the classic flavors of chicken pot pie without the fuss of pie crust and oven times. Grab a rotisserie chicken to make it even easier on yourself.

3. Taco Stuffed Peppers

Sweet peppers make the perfect base for these easy stuffed beauties. Fill'm with saucy spiced ground turkey and fluffy rice, then top'm with melty cheese. Add a little pickled onion and lil drizzle of lime crema, but only if you're feelin' extra and not in survival mode.

4. Air Fryer Salmon Bites

Tender, flavorful, and ready in minutes. Simple seasoning + the air fryer turns bite-sized salmon into the perfect protein to accompany your favorite sides or throw'm on a yummy caesar salad (my latest fave)!

5. Skillet Zucchini Lasagna

Tender zucchini, seasoned meat, and melty cheese comes together in one skillet for an easy, lighter dinner that still tastes totally cozy! Pair with some garlic-y bread for good measure.

I know I can't be the only one who gets into the thick of summer and suddenly has absolutely no idea what to make for dinner anymore, like I barely want to even step foot in the kitchen. It's waaaay too hot to turn on the oven, nobody wants a heavy meal especially after a day outside, but for some reason, everyone still needs to eat more than random handfuls of pretzels with peanut butter out of the pantry (although some days im perfectly fine with that). So here are a few easy meals I...

Hi friend! Mother’s Day is this weekend, and I’m just going to say it: if you are the mom, you should not have to be in the kitchen (unless you want to!), grocery shopper, cook, dishwasher, and emotional support snack provider this weekend. That feels illegal. Or at the very least.. a lil rude! So I pulled together a few easy Skinnyish Dish recipes that would be perfect for Mother’s Day weekend. Not necessarily fancy brunch with tiny flowers and linen napkins, because honestly, that is not...
