Wow… it’s already Monday? Easter weekend really flew by.

Who else is sitting here like wait… what are we even eating this week?

Whoops.. Well, lets get to it y'all!

Put the phone down… we don’t need DoorDash. We just need a few easy meals to get us through the week.

Here are 5 dinners that are simple, family friendly, and so good. no overthinking necessary!

1. Ham and Potato Soup

Leftover ham from Easter? perfect! This soup is creamy, cozy perfection with some extra protein to help keep you full longer than your average potato soup. Pair it with some bread and/or salad and call it dinner!

2. Instant Pot White Chicken Chili

This is one I come back to again and again. I’ve been making it for almost a decade and it never gets old. Creamy, comforting, full of flavor, and has enough fiber + protein to keep you totally satisfied.

3. Chicken Margherita

Feels a little fancy, but it’s weeknight easy. Perfectly seasoned chicken, melty mozz, fresh pesto, and juicy tomatoes with plenty of protein to keep you full without that heavy feeling.

4. Air Fryer Chicken Tenderloins

Stupid easy. Insanely quick. I keep chicken tenderloins in my fridge at all times now because these are just so good. No breading, but you won’t miss it. Throw them in wraps, salads, or serve with a couple sides. My kids are obsessed with dipping them in ranch and BBQ.

5. Crockpot Mexican Shredded Beef

Set it, forget it, and come back to the most tender, flavor-loaded shredded beef. It’s rich, smoky, and perfect for a easy dinner, throw it in tacos, bowls, salads, whatever you’re feeling!
