Dinner in 30 minutes. Pinky promise.

Hey there,

If your evenings have been feeling a little… chaotic lately, this week’s plan is for you.

We’re talking 30 minute (or less) dinners ONLY. Super easy, fast, filling, and still very much in the skinny-ish comfort food zone.

Around here, quick does NOT mean boring. It means we're kinda thriving in survival mode and taking a few short cuts here. And that, is perfectly fine!

On this week’s menu:

Air Fryer Steak Bites

Big flavor, barely any effort. These cook up fast and feel a little fancy even on a random Monday night.

Air Fryer Chicken Tenderloins

Perfectly seasoned, tender as can be, and major kid approval over here. Perfect for dipping and easy to pair with whatever sides you’ve got. I also love to chop'm up and throw them on a big bagged salad kit for ultimate ease.

Homemade Hamburger Helper

Creamy, nostalgic comfort food… but made at home with simple ingredients you can feel good about. Always a home run with the whole fam!

Chicken Cheesesteaks

Tender chicken + melty cheese + sautéed peppers and onions = the kind of dinner that disappears fast. Obviously perfect on a sub roll, but also fantastic stuffed in a baked potato or low-ish carb wrap!

Bacon Cheeseburger Cauliflower Skillet

All the cheeseburger vibes in a lighter, veggie-packed skillet. Weeknight magic right here!

Homemade Taco Pizza

When taco night and pizza night join forces. Fun, easy, and always a hit with the family. If you know what casey's taco pizza is... you'll be extra obsessed with this one!

Bonus! Meal prep lunch recipe

Chicken Salad with Grapes

This recipe post got a major makeover this week. It's a reader favorite and deserved some updating with lots of helpful tips and much better photos.

These are the kinds of meals that save weeknights and keep everyone full without you living in the kitchen.

Cheering you on this week,

Star

I know I can't be the only one who gets into the thick of summer and suddenly has absolutely no idea what to make for dinner anymore, like I barely want to even step foot in the kitchen. It's waaaay too hot to turn on the oven, nobody wants a heavy meal especially after a day outside, but for some reason, everyone still needs to eat more than random handfuls of pretzels with peanut butter out of the pantry (although some days im perfectly fine with that). So here are a few easy meals I...

grilled chicken in a skillet covererd with mozzarella, cherry tomatoes, and pesto

Hi friend! Mother’s Day is this weekend, and I’m just going to say it: if you are the mom, you should not have to be in the kitchen (unless you want to!), grocery shopper, cook, dishwasher, and emotional support snack provider this weekend. That feels illegal. Or at the very least.. a lil rude! So I pulled together a few easy Skinnyish Dish recipes that would be perfect for Mother’s Day weekend. Not necessarily fancy brunch with tiny flowers and linen napkins, because honestly, that is not...
